Stuffed Lunch Rolls: Kid-Approved & Freezer-Friendly

These are incredibly yummy and freeze well. I make a massive batch and put them in the freezer for us to grab for lunches as needed. My favorite variations are Ham and Cheddar (pictured), Bacon, Mushroom and Swiss, Spinach and Feta, we’ve even made it with leftover pizza toppings! Be creative – it’ll taste great!


Using This Bread Recipe:

Seriously, this is a bread recipe that you can’t goof! As long as your yeast is good you can add something extra, take something away only use a partial amount of an ingredient, make substitutions, this bread tastes good no matter what! There is nothing I love more than yummy fresh baked bread.


Ingredients:

• 2 cups of water (warm, it should feel like the bath tub)
• 2/3 cups of oil
• 1/2 cup of sugar
• 1 tablespoon of yeast

— let it sit for 5-10 minutes.

• 1 egg
• 6 cups of flour

— knead until elastic.

• 1/2 teaspoon of salt

— knead a tiny bit more, then cover the dough ball with plastic wrap. Let rise to double in size, then form into rolls, loaves, pizza dough, whatever. Start the oven at 350-400, while it is preheating let the bread re-rise. Bake till golden brown.

Variations:

• Add a knife-full of molasses to the warm water. Your bread will have a fuller flavor.

• Roll the bread out like a square pizza and coat with butter and then sprinkle heavily with cinnamon and sugar, or garlic, or grated some cheddar cheese over the dough, or even layer with lunch meat and onion, roll the dough and slice for rolls.

• Substitute a cup of potato flakes in the flour. Yummy, potato bread

THEN:
roll out the dough about half an inch thick.

Layer first with the veggie if you are adding one (we love onions!), add the meat and top with the cheese. You will want the layers to leave a margin of about two inches on one side.

You will use this to seal the roll. Begin rolling from the side without the margin. Roll as tightly as possible. At the end, if the dough is not sticking to itself easily, you might have to brush it with a bit of water. Then cut 2inch wide wheels off of your bread log. Let them rise for 20 min then bake at %350. Enjoy!

Turkey Salad


Ingredients


• 6 eggs
• 6 cups cooked turkey meat
• 1 (16 ounce) jar sweet pickles, chopped
• 1 1/2 (10 ounce) jars mustard-mayonnaise blend
• 3/4 cup mayonnaise

Directions
1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

2. In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.

I put the grapes or even mandarin oranges, as well as the pecans or walnuts directly into the salad. The chunkier the better. It is so good!

I halved the number of eggs and added celery,green onions, and mandarin oranges. Try using half Miracle whip and half mayo for a taste sensation

Great Pimento Cheese


Ingredients

• 1 (8 ounce) package cream cheese, softened
• 1/4 cup sour cream
• 1/4 cup mayonnaise
• 1/4 cup grated white onion
• 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
• 1/2 teaspoon garlic powder
• salt and ground black pepper to taste
• 2 cups shredded Cheddar cheese


Directions

1. Stir together the cream cheese, sour cream, and mayonnaise until smooth. Add the grated onion, the drained tomatoes with green chilies, garlic powder, salt, and pepper. Stir in the Cheddar cheese. Refrigerate until set, at least 2 hours.

Tarragon Chicken Salad


½ cup mayo
¼ cup yogurt
1 t poppy seeds
2 - 7 oz cans chicken
2 stalks celery
1 t. tarragon
Red seedless grapes
Handful of walnuts
Handful of pecans

Mix together, and serveas sandwich, on tomato as a salad, or with crackers.

Tuna Cream Cheese Spread

1 6 oz can tuna (drain)
1 8 oz soft cream cheese
1/2 cup mayo
1/2 cup pecans
2 T lemon juice
1/2 cup black olives (chopped)
Black Pepper to taste

Mix together well, use as a spread with crackers or on bread as a sandwich spread

Egg Salad

Another sandwich recipe for the Brown Bagger...




8 large eggs, boiled
1 stalk of celery finely diced
2 Tablespoon yellow sweet onions, finely diced
4 Tablespoon mayonnaise
3 Tablespoon sweet pickle relish
1 Tablespoon EVOO (extra virgin olive oil)
1 Tablespoon mustard
1 teaspoon Italian Salad Dressing Mix
1 teaspoon cider vinegar
1 teaspoon dried sweet basil leaves
1/2 teaspoon dried dill
1/2 teaspoon turmeric
1/2 teaspoon worcestershire sauce
1/4 teaspoon white pepper

Directions:

Halve the eggs and seperate the yolks fromthe whites.  Chop the whites (set them aside).  In a medium mixing bowl mash the yolks. 

To the finely mashed yolks, add all of the ingredients except for the chopped whites, savign the mayo for last.  Stir as you add each tablespoon of may to make sure it does not get to thin.  Use only what you need of the 4 tablespoons.

Add the chopped whites to the mix and fold them in carefully.

Refrigerate for at least one hour before serving.

Blenda's BLT ~ Bacon/Tomato Sandwich

  • Peppered Bacon
  • Heirloom tomatoes
  • Butter
  • Bread
  • Mayo
  • Lettuce (optional)
Fry bacon (crisp), slice tomatoes and let butter sit out for a few minutes so it is spreadable.  (You can use spreadable margarine if you like....we like BUTTER!)

Toast Bread, spread butter on toast, then spread thin layer of mayo.  Build your BLT with layers of bacon, tomato and ENJOY!!

Brown Bag Lunch ~ AKA Sandwiches

Strawberry Cream Cheese Sandwich
* Whole Wheat Bread
* Sliced Strawberries
* Cream Cheese
* Honey
* grated orange zest
Mix cream cheese, honey, grated orange zest and spread on whole wheat bread. Layer with strawberries. Enjoy!!

PBJ & Banana
* Cinnamon Raisin Bread
* Peanut Butter
* Sliced Bananas
* Strawberry Jam
Spread peanut butter on one slice of bread, and jam on the other slice of bread. Layer bananas on the peanut butter and top with jam slice of bread. Yummy!

Tuna In A Pocket
* Pita Pocket Bread
* Tuna
* pecans
* mayo
* dash of dijon mustard
* finely diced carrot
* salt/pepper to taste
* Lettuce leaves
** other options include diced apples, celery, anything that you like in yor tuna. Line pita pocket with lettuce leaf, scoop in the tuna. umm. good!

Egg Salad
* boiled eggs
* chopped celery
* mayo
* dash of dijon mustard
* diced green onions
Assemble as a sandwich or serve on lettuce leaves

Cali Wraps
*Whole Wheat or your favorite tortilla wrap (I like the Spinach wraps)
* Cream Cheese
* Crisp bacon
* Sliced cucumber
* Avacado slices

Spread cream cheese on wrap and layer with ingredients, roll and secure with a toothpick.
